  • 3 ripe Bananas

  • 2 (large) eggs

  • 2 tablespoons spelt flour

  • Pinch of salt

  • Pinch of cinnamon

  • 2 tablespoons plant based milk (almond/rice/soya/oatmilk)

  • Coconut oil

  • Optional topping
  • Hand full blueberries

  • Hand full walnuts

  • 2 tablespoons coconut rasp

  • Maple syrup


  • Start with smashing up the ripe bananas with a fork.
  • Add the eggs and plant based milk to the mixture and whisk up.
  • Slowly add the spelt flour, cinnamon and salt to the mixture and whisk up for about 2 minutes. Or when you have a smooth consistency.
  • Take a pan and put it on medium high heat. Add a teaspoon of the coconut oil in the pan. And start with baking the pancakes. Depending on the size of your pan, normally you can bake up to 2/3 pancakes (1 pancake about 8-10cm wide).
  • When you are out of mixture it’s time to get creative! Add your favorite topping on the banana pancakes. I suggested an option but really any nice fruit or nut will make it a party for your tummy!
  • Buon appetito!


  • You don’t want to bake the pancakes too long. Otherwise they lose their nice and fluffy consistency. You want to have a nice golden brown color on each side, baking for around 3/4 minutes on each side, I would say.
