Ingredients

  • 1 whole cauliflower

  • 3 gloves garlic (finely sliced)

  • 2 teaspoons cumin

  • 1 teaspoon paprika powder

  • 2 tablespoons curry powder

  • 2 tablespoons thyme

  • 5 shakes chili powder

  • 1 teaspoon cinnamon

  • salt & pepper

  • olive oil

  • pomegranate

  • fresh parsley

Journey

  • Boil water in a pan. Add a pinch of salt. Place the whole cauliflower in the pan and boil for 12/ 13 minutes. Preheat the oven to 200 degrees.
  • Mix all spices together with the garlic.
  • Place the cauliflower on a tea towel to let it dry. Gently push with a tea towel the upper part, to speed up the process.
  • Take a baking tray and cover with baking paper. Put the cauliflower on the baking paper.
  • Sprinkle about a tablespoon of olive oil on the cauliflower.
  • Use your hands to rub the mixed spices into the oiled cauliflower.
  • Place the tray in the middle of the oven and roast for about 30 minutes or until nice and golden.
  • Finish up with a sprinkle of olive oil, freshly cut parsley and a bunch of pomegranate seeds.
